Making of Green Chicken Sukka For Beginners....
* 1 cup roughly chopped coriander leaves
* 1/2 cup roughly chopped mint leaves
* 2 - 3 green chilies
* 750 grams chicken on bone , cut into 1 inch pieces
* 1 inch ginger
* 4-5 garlic cloves
* 2-3 tablespoons oil
* 8 - 10 curry leaves
* 2 medium onions sliced
* salt to taste
* 1 teaspoon crushed black peppercorns
* juice of 1 lemon
METHOD OF COOKING :
STEP 1 : Place coriander , mint and green chillies in a mixer jar.
STEP 2 : Roughly chop the ginger and add to the mixer. Add half the garlic, salt, lemon juice and grind to a coarse paste.
STEP 3 : Add the chicken and mix well. set aside to marinate for fifteen to twenty minutes.
STEP 4 : Heat oil in a pan, crush remaining garlic and add to the pan.
STEP 5 : Saute till golden brown.
STEP 6 : Add curry leaves and onion.
STEP 7 : Fry till onions are golden brown.
STEP 8 : Add the chicken and mix well.
STEP 9 : Add salt and crushed black peppercorns and mix.
STEP 10 : Cover and cook for twenty five to thiry minutes or till the chicken is cooked. Serve hot.
